Stampy or Baked Mash Potatoes



  1. Pre-heat oven to 400F
  2. Peel and grate the raw potatoes; place them in the centre of a clean tea towel and wring to extract excess starchy liquid.
  3. Place into a bowl to stand for two hours covered with the damp tea towel to prevent browning.
  4. Mash the cooked potatoes with the butter and cream and add the grated potates
  5. Mix in the caraway seeds, sugar, salt and freshly ground pepper.
  6. Sift the flour and add to mix to make a soft pliable dough.
  7. Turn the dough onto a floured surface and knead lightly.
  8. Place on a preheated baking sheet and cut into 4-8 slices.
  9. Pre-heat oven to 400F
  10. Bake for 35-40 minutes.
  11. Serve hot with butter.
