Stampy or Baked Mash Potatoes
Ingredients:
- 8 oz. Raw Potatoes
- 8 oz. Cooked Potatoes, mashed
- 8 oz. Self-Raising Flour
- 4 oz. Caster Sugar
- 2fl oz Double Cream
- 1 oz. Butter
- 2 tsp Caraway Seeds
Method:
- Pre-heat oven to 400°F
- Peel and grate the raw potatoes; place them in the centre of a clean tea towel
and wring to
extract excess starchy liquid.
- Place into a bowl to stand for two hours covered
with the damp tea towel to prevent browning.
- Mash the cooked potatoes with the butter and cream and add the grated
potates
- Mix in the caraway seeds, sugar, salt and freshly ground
pepper.
- Sift the flour and add to mix to make a soft pliable dough.
- Turn the dough onto a floured surface and knead lightly.
- Place on a preheated baking sheet and cut into 4-8 slices.
- Pre-heat oven to 400°F
- Bake for 35-40 minutes.
- Serve hot with butter.
