Bubble and Squeak Potatoes and Brussel Sprouts

Ingredients - Yields 4:

 Method:

  1. Heat the butter or oil in a large frying pan.
  2. Add the onion and cook until soft.
  3. Add the potatoes and cabbage (or sprouts).
  4. Mix well.
  5. Fry over a medium heat, turning occasionally, for 15 minutes or until golden brown.
  6. Serve with bacon and eggs for breakfast or as part of a supper dish.
