Bubble and Squeak Potatoes and Brussel Sprouts
Ingredients - Yields 4:
- 1lb Potatoes, cooked and mashed
- 8oz Cabbage or Brussel Sprouts, cooked and finely
chopped
- 1oz Butter or Oil
- 1 Onion, finely chopped
Method:
- Heat the butter or oil in a large frying pan.
- Add the onion and cook until soft.
- Add the potatoes and cabbage (or sprouts).
- Mix well.
- Fry over a medium heat, turning occasionally, for 15 minutes
or until golden brown.
- Serve with bacon and eggs for breakfast or as part of a
supper dish.
