Shrimp and Okra Gumbo
Ingredients:
- 1 doz. medium cooked shrimp, peeled
- 1 medium onion, sliced
- 2 celery stalks, chopped
- 3 jalopeno peppers
- 1 tsp tabasco sauce
- 3 cloves garlic, chopped
- 1
- 14.5 oz. can corn
- 1 - 16 oz. bag cut okra
- 1 tsp basil
- 1 tsp thyme
- 1 tsp cumin
- 2 bay
leaves
- salt and pepper
- Olive Oil
- 1/4 cup flour
- 1 - 16 oz can vegetable broth
- 3 diced tomatoes
- 2 tsp. Worcestershire sauce
Method:
- Prepare a "roux" by sauteeing olive
oil and a bit of flour; stir continually until it turns a rich
brown color.
- Next add onion, celery, jalapeno
peppers, garlic, and black pepper to taste until the vegetables began
to soften.
- Gradually stir in in vegetable broth,
diced tomatoes, worcestershire sauce, tabasco sauce, corn, okra, basil, thyme, cumin and bay
leaves.
- Cover and allow to simmer for 20-30 mins.
- Remove bayleaves and discard
- Add shrimp a few minutes before serving. (Add salt to taste.)
