Shrimp and Okra Gumbo



  1. Prepare a "roux" by sauteeing olive oil and a bit of flour; stir continually until it turns a rich brown color.
  2. Next add onion, celery, jalapeno peppers, garlic, and black pepper to taste until the vegetables began to soften.
  3. Gradually stir in in vegetable broth, diced tomatoes, worcestershire sauce, tabasco sauce, corn, okra, basil, thyme, cumin and bay leaves.
  4. Cover and allow to simmer for 20-30 mins.
  5. Remove bayleaves and discard
  6. Add shrimp a few minutes before serving. (Add salt to taste.)
