Pasti Gocos or Cockle Pie
Ingredients:
- 2 pints Cockles
- Pastry dough
- Spring onions or chives
- 5 oz. water
- pans for boiling cockles
- baking dish for oven
- salt and pepper to taste
Method:
- Cook 2 pints of Cockles in 1 cup of water and half teaspoon
salt
- Line sides of pie dish with thickly rolled pastry
- Layer cockles in bottom of dish
- Sprinkle with chopped chives or spring onions and diced
bacon
- Repeat layers until dish is full
- Pour liquid cockles were boiled in and add pepper
- Criss-cross strips of pastry over top of dish
- Cook slowly at 190 degrees until pastry is done
- Serve hot with salad or potatoes
