Ffowlin Cymreig or Welsh Chicken Recipe

Ingredients:

Method:

  1. Prepare and truss young birds or cornish hens for boiling
  2. Dice bacon, leeks, and carrots and put in casserole dish with butter to fry until brown
  3. Stir in flour until thickened and place chicken in sauce
  4. Wash and cut small cabbage; put in casserole with chicken
  5. Add herbs, salt and pepper
  6. Add suet, stock and drippings
  7. Cover and simmer for two or  three hours
  8. Serve hot with biscuits or bread
