Ffowlin Cymreig or Welsh Chicken Recipe
Ingredients:
- One large or two small chickens
- ½ lb. carrots
- ½ lb. bacon (cig mochyn)
- 1 oz. butter
- 2 large leeks
- Mixed herbs (choices to preferred taste)
- Pepper and salt
- 1 oz. flour
- 1 small cabbage
- suet
- ½ pint stock and drippings
Method:
- Prepare and truss young birds or cornish hens for boiling
- Dice bacon, leeks, and carrots and put in casserole dish
with butter to fry until brown
- Stir in flour until thickened and place chicken in sauce
- Wash and cut small cabbage; put in casserole with chicken
- Add herbs, salt and pepper
- Add suet, stock and drippings
- Cover and simmer for two or three hours
- Serve hot with biscuits or bread
