Soufle Spinaki (Spinach)

Ingredient:

Method:

  1. Clean and wash spinach. 
  2. Select only the tender leaves; chop these
  3. Season lightly with salt and pepper, and place in a strainer for about 15 min.
  4. Put spinach in food processor and blend till fine cut
  5. Melt butter - add flour, stirring constantly to a smooth paste.
  6. Add milk, egg yolks, salt and pepper and stir to make a thick sauce.
  7. Pour sauce into spinach and blend for about 4 min. in processor, then stir in scallions
  8. In a separate bowl blend egg whites with a little cornstarch until egg whites are stiff.
  9. In a prepared (floured and greased) baking tin -

Bake at 375 degrees F. for 45 minutes or until knife comes out clean in center; cool and serve!
