Soufle
Spinaki (Spinach)
Ingredient:
- 1 lb. Raw spinach,
chopped
- 1 tsp Salt
- 1/4 tsp pepper
- 10 tbspn Butter (1/2 stick)
- 1/4 cup Flour
- 2 cup Milk
- 7 Eggs separated
- 2 tbspn cornstarch
- 5 Scallions, chopped (white only)
Method:
- Clean and wash
spinach.
- Select only the tender leaves; chop these
- Season lightly with salt and pepper, and place in a strainer for about
15 min.
- Put spinach in food processor and blend till fine cut
- Melt butter - add flour, stirring constantly to a smooth
paste.
- Add milk, egg yolks, salt and pepper and stir to make a thick sauce.
- Pour sauce into spinach and blend for about 4 min. in processor, then
stir in scallions
- In a separate bowl blend egg whites with a little cornstarch until egg
whites are stiff.
- In a prepared (floured and greased) baking tin -
- Add spinach mixture
- Pour egg whites on top and stir in slowly (marbling soufle) without
touching sides or bottom of pan
Bake at 375 degrees F. for 45 minutes or until knife comes out clean in center;
cool and serve!
