Pwdin Reis Mamgu or Granny's Rice Pudding



  1. Simmer rice in water until grains are swollen.
  2. Add butter, sugar and milk, nutmeg, and pinch of salt, and cook gently for about two hours, stirring frequently.
  3. Remove from heat and beat in egg yolks. Just before serving add stiffly beaten whites of eggs.
  4. Serve with jam or honey.
