Pwdin Reis Mamgu or Granny's Rice Pudding
- 2 ozs. rice
- 1/2 pint water
- 1 oz. butter
- 2 ozs.sugar (demerara)
- 1 pint milk
- 1 or 2 eggs
- 1/2 teaspoonful nutmeg
- pinch salt
- Simmer rice in water until grains are swollen.
- Add butter, sugar and milk, nutmeg, and pinch of salt, and cook
gently for about two hours, stirring frequently.
- Remove from heat and beat in
egg yolks. Just before serving add stiffly beaten whites of eggs.
- Serve with jam or honey.
