Pickled Peaches
Description - Delicious pickled peaches with a hint of cinnamon and cloves
Ingredients:
- 6 lbs. peaches
- 3 lbs. white sugar
- 1 ½ pints distilled malt vinegar
- 1 oz. cloves
- 1 oz. allspice
- 1 oz cinnamon stick
Method
- Dip the peaches in hot water then peel them
- Cut peaches in half and remove the stones
- Tie the spices in a muslin bag and boil the vinegar, sugar
and spices together
- When the liquor is boiling, put in the halved peaches and
simmer until tender
- Remove the peaches carefully and place in warmed jars
- Boil up the pickle again to a thick syrup and pour over the
fruit
- Close jars while still hot and store for at least a week
before using
