Lemon Whey



  1. Put the milk in a porcelain-lined pan with the rind and juice of the lemons. Pare the rind very thinly.
  2. Let. it boil, then simmer by the fire for five minutes.
  3. Strain either through muslin or a very fine strainer.
  4. Sweeten with the sugar or to taste.
  5. Use cold.
