Kefir Salad Dressing
Ingredients:
- 2 large garlic clove,
finely minced
- 1 tablespoon
Dijon-style mustard
- 2 tablespoons fresh lemon
juice
- 2 1/2 tablespoons white-wine
vinegar
- 1 tsp paprika
- Salt and freshly ground
black
pepper
to taste
- 4 tbspn brown sugar
- 1/2 cup olive oil
- 2 cups crumbled kefir cheese
Method:
- In a blender
or small food processor blend together garlic, mustard,
lemon juice, paprika, and vinegar.
- With the motor
running add the oil in
a slow stream and blend until mixture is combined.
- Add 3/4
cup kefir cheese or enough to obtain desired consistency. Blend dressing until it is
combined well. Stir in the additional kefir cheese.
Salt
and pepper to taste, add water to bring to desired consistency.
- Place in covered bottle or jar and refrigerate. Store for 24 hours before
use to allow herbs and ingredients to come to full flavor!
