Makes about 35 to 40 pieces.



  1. Beat the egg white to the soft peak stage in a large bowl and set aside.
  2. In a saucepan, boil the sugar, water and syrup while stirring gently. to 114 - 118C (238 - 245F) on sugar thermometer, soft-ball stage.
  3. Pour the sugar mixture over the beaten egg white, beating continually.
  4. Add vanilla, nuts and a pinch of salt.
  5. Add a few drops of food colouring if desired.
  6. Beat this mixture until almost hard, then drop teaspoonfuls onto waxed paper.
