Crempog or Welsh Light Cakes or Pancakes
Ingredients:
- 6 tablespoonfuls flour
- 2 tablespoonfuls sugar
- 2 or 3 eggs
- ½ teaspoonful bicarbonate of soda and 1 tablespoonful cream of tartar dissolved in water
- Pinch of salt
- 2 or 3 tablespoonfuls of sour cream if available
- Buttermilk or milk to mix
Method:
- Make into a batter,
beating till bubbly with a wooden spoon.
- Bake on a hot griddle or
frying pan, using very little fat.
- Serve hot with butter.
The old
way was to make large pancakes, spread them with butter, pile them
on a plate and cut into quarters. Double the milk to thin batter
to make Crepes!
