Cranberry Wheat Germ Bread
Ingredients:
- 2 cups sifted
enriched flour
- 1/2 cup chopped
pecans
- 1 cup
sugar
- 1/2 cup wheat
germ
- 2 tsp. baking
powder
- 3 tbs. grated
orange peel
- 1/2 tsp. baking
soda
- 1 egg, slightly
beaten
- 11/2 tsp.
salt
- 1/2 cup orange
juice
- 2 tbs. salad
oil
- 1/4 cup warm
water
- 1 cup dried, halved
cranberries
Method:
- Mix the flour, sugar, baking powder, baking soda and
salt.
- Stir in the cranberry halves, pecans, wheat germ and orange peel.
- Combine
egg, orange juice, water and oil.
- Add to flour mixture; stir just enough to
moisten ingredients.
- Spoon into greased loaf pan, 9"x31/2"x5".
- Bake at 350º F. for
50 to 60 minutes or until done.
- Cool in pan 5 minutes; remove from pan; finish
cooling on rack.
