BULGAR BREAD
Ingredients
- 3 1/2 to 4 cups bread flour
- 1
c. dry bulgar wheat
- 3 c. boiling water
- 1/2 c. honey
- 3 tbsp. vegetable
oil or butter
- 1 tbsp. salt
- 1 package active dry yeast
- pinch of
sugar
- 1/4 c. warm water
- 1/4 c. wheat germ (opt.)
Directions:
- Pour boiling water over bulgar wheat. Stir in honey
and oil or butter. Soak for 15 minutes; allow to cool until lukewarm.
- Combine yeast and 1/4 cup warm water with a pinch of sugar. Allow to sit for
5 minutes or until foamy. Discard if yeast does not foam
- Combine all ingredients to form a dough. Turn out onto a lightly floured work
surface and knead for 5 minutes, or until dough is smooth and elastic
- Place in a lightly greased bowl. Let rise until doubled in bulk. Punch down
center and press out air
- Form dough into 2 loaves. Place loaves into loaf pans which have been
buttered or brushed with oil and lightly dusted with flour. Tap out excess
flour
- Bake for 45 to 50 minutes in 350°F oven
- White flour may also be replaced with some wheat flour, if
desired.
